2 cloves of garlic, grated

4-5 sprigs of parsley, washed, drained, and finely chopped

1,5 cups of hot water

2 slices of stale bread, crumbled
1 teaspoon dried mint
1/2 teaspoon black pepper

Olive oil

1 teaspoon red pepper flakes/powder
Lentil Paste Recipe Instructions
Preparations: Prepare the ingredients as listed above.
Cooking: Place the lentils in a suitable pot with hot water and cook. Once boiling, skim the foam with a spoon, cover, and cook on low to medium heat until the water is absorbed, and the lentils are soft enough to mash. Set aside to cool. Sauté the onion and garlic in 2-3 tablespoons of olive oil over medium heat until softened, then let them cool.
Final Steps: Combine all the ingredients, except for the topping, in a mixing bowl and knead until the lentils are thoroughly mashed. Adjust the seasoning and acidity to taste. Once done, transfer to a serving dish and spread evenly.
Serving: Heat 2-3 tablespoons of olive oil in a sauce pan, fry the red pepper flakes, and drizzle over the paste.
